• Refrigerator Soup

    Named because whatever is in your fridge can be used, so feel free to make substitutions with the veggies!

    Ingredients
    • 1 medium-size sweet onion
    • 1 bay leaf
    • handful of string beans
    • 1 yellow squash
    • 1 zucchini squash
    • 2 whole tomatoes diced into 1/2 pieces
    • 3 carrots
    • 3 stalks of celery
    • handful of spinach
    • fresh thyme to taste
    • 3 pepper corns
    • 1 quart low sodium chicken or vegetable broth
    • 2.5 cups of water
    Directions
    1. Saute onion and celery in 8-quart stockpot until onion is translucent
    2. Add all the rest of the ingredient except the spinach
    3. Simmer for about 45 minutes. 
    4. Add spinach and simmer until cooked (~3 min)
